  • 6 ounces dry fettuccine pasta

  • 2 skinless, boneless chicken breast halves – cooked and cubed
  • 2 cups chopped fresh broccoli
  • 2 small zucchini, julienned
  • 1/2 cup chopped red bell pepper
Directions

Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain. While pasta is cooking, melt cream cheese and butter in a skillet over low heat. Stir until smooth. Stir in milk, and season with garlic powder, salt, and pepper. Simmer for 3 minutes, or until thickened, stirring constantly. Mix in chicken, broccoli, zucchini, and red pepper. Beat in the salt, coconut flavoring, and vanilla extract. Continue beating until mixture is smooth and spreadable.   • 1 pound dry ziti pasta
  • 1 onion, chopped
  • 1 pound lean ground beef
  • 2 (26 ounce) jars spaghetti sauce
  • 6 ounces provolone cheese, sliced
  • 1 1/2 cups sour cream
  • 6 ounces mozzarella cheese, shredded
  • 2 tablespoons grated Parmesan cheese

 

Directions

Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.   • 1 quart oil for deep frying
  • 1 (16 ounce) package mozzarella cheese sticks
Directions

In a small bowl, mix the eggs and water. Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch. In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C). One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds.   • 1 cup chopped pecans

 

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan. In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil, 1 1/4 teaspoon vanilla, pineapple and 3/4 cup chopped pecans. Spoon batter into prepared pan.
